As a professional chef my passion is to prepare food properly, creatively, appealingly, and safely. By using fresh ingredients and attention to formulas, processes, timely execution an array of delectable food can be presented! Creatively improving, developing familiar recipes, and implementing new and treading recipes is a constant goal of mine.
I have a degree in Culinary Arts from the institute of Denver which focused on all aspects of culinary training from basic cooking skills to fine dining presentation. My college experience included an over sea’s culinary training program and visiting several provinces and chefs in their restaurants in France. I am certified with the American Culinary Federation as a Certified Working Pastry Chef and a member of our local South Dakota chapter. The American Culinary Federation requires recertification every 5 years, continuing education, and culinary conferences. I am also a certified Barbecue judge with the Kansas City BBQ Society.
My experience for the past 22 years has been in specializing and developing pastries in a commercial bakery department. Which has included managing a commercial kitchen producing a full breakfast to dinner menus, inventory control, ordering and point of sales operation.
Community outreach in the culinary profession is another passion of mine. Teaching culinary classes through Black Hills Community Education and “Someones’s in the Kitchen” store. Teaching classes and mentoring students with Youth and Family Services, Club for Boys, and our local elementary and high schools. And for numerous years, a part of the South Dakota Retailers Association, Professional culinary competition (Pro-Start) mentoring students choosing a career in the culinary profession.
With all my previous profile points being mentioned, the most important part of managing a commercial kitchen is working as team with all staff involved. Promoting a professional, respectful, and appreciative environment for each member of the team is a diligent quest. With emphasis on realizing any gift I am entrusted with is a gift from God and all our efforts are towards His glory.
